Haloumi and Zucchini Fritters

600g zucchini’s coarsely grated 

180-200g haloumi coarsely grated 

1/2 cup mint leaves (shredded) 

3 eggs lightly beaten 

2 tbs milk 

1 cup self-raising flour 

1/4 tsp dried oregano  


Place zucchini in a sieve over a bowl and sprinkle with 1tsp of salt. Set aside for 10 minutes. Whisk together the egg, milk, oregano and flour.  


Squeeze the excess liquid out of the zucchini in batches and add to the egg mixture along with the haloumi and mint leaves. Mix well. 


Heat a frypan over medium heat with 5mm of olive oil. Pan fry heaped tablespoons of the mixture in small batches for 3 minutes on each side or until golden brown. Drain on paper towel and repeat with the rest of the mixture. 


Serve with sliced radish, Greek yoghurt, mint leaves and freshly squeezed lemon juice.
