Corn Fritters with Haloumi, Avocado and Bacon
This is my favourite brunch dish! It has it all! You can add a poached or fried egg it you like or even some grilled chorizo
Serves 4- 6
2 cobs of corn, raw kernels cut off
6 spring onions, finely chopped
2 eggs, separated
1/2 cup self raising flour
1/2 teaspoon baking soda / bicarbonate of soda
3 tbsp milk
salt and freshly ground black pepper
180 gms haloumi cut into 8 slices
6 rashers of bacon
1 cup sour cream
Chilli jam, sliced red onion, lemon and rocket.
Mix together corn and spring onions. Mix egg yolks into the corn and then flour and baking soda dissolved in milk. Beat egg whites until soft peaks and fold into the corn mixture.
In one frying pan heat butter until sizzling and cook 1/4 cupfuls of mixture until golden on both sides. At the same time grill the bacon them the haloumi in a separate fry pan. Serve immediately piled high with avocado, sliced onion, sour cream, rocket and chilli jam
